In this class, we identify 6 key genetic differences where nutrition can be beneficial and healing for African Americans. We empower students with health and nutrition information on how to use food to strengthen their bodies, their minds and their spirit, so they can enjoy life and thrive.

Jacquelyne (Jacqui) was born and raised in Southeast Texas, with deep roots from south Louisiana. Cajun and soul foods were weekly cuisines prepared in her home as her father began teaching her how to cook from scratch, at the young age of 11. Delicious meals, filled with an abundance of flavor and executed with seasoning, butter and sugar were her norm!
While her love of food was nurtured at a young age, as an adult, this love turned into a love/hate dichotomy due to the negative effect these things could have had on her health. For this reason, Jacqui co-created this class in hopes of being a conduit in bridging the difference into similarities for health and nutrition for African Americans.
Jacqui has been reversing her high blood pressure with nutrition since becoming more plant-based. She is a tremendous leader, an entertaining chef, and has a heart for nutrition as a prominent educator in the Black & African American community.
Terry Bell is a nutritionist and has experience teaching various topics and cooking classes in the North Texas community. She is also a Silver Premier Distributor with Saladmaster and an excellent chef!
Katherine Lawrence is a Cornell & Stanford-trained Certified Nutritionist who specializes in disease prevention & nutrition science. You may be wondering why Katherine, a caucasian, created this class? Many people inquire about this, so we wanted to open up and share with you here!
Katherine has been teaching nutrition for over a decade now and has immersed herself in the latest research and scientific findings. While studying for her Stanford nutrition refresher program last year, she noticed a footnote (in tiny print) that stated “these requirements may not apply to blacks and African Americans." It floored her! There was never a time in her education that mentioned African Americans may have different nutrition requirements. She briefly did some investigating and didn’t find much, so thought she could let it go.
But God.
A few weeks later, Katherine felt God speak to her that she needed to dig further, and she did for an entire year. Katherine immersed herself in understanding some genetic differences in people whose descendants originated from West Africa. Once she found the information, she took it to Jacquelyne Samuels and explained that she felt God was calling her to create an awareness program to share this information. Throughout this investigation, Katherine had several reservations given her heritage and how that would be received. However, after more prayer, and Jacquelyne’s encouragement, she continued on the journey to find the truth. Jacquelyne reminded her that her team at Food Saved Me was over 50% African American and that they all knew her heart.
Creating this class has opened Katherine’s eyes to so many injustices and biases in our system. She was warned, repeatedly, by some colleagues not to take on such a controversial topic. But God still pushed her.
In her research, she identified 6 different areas where genetic differences exist between African Americans and Caucasians, and where nutrition might be especially powerful. What started out as a short handout, quickly became a 56-page book, and as Katherine describes it, “God just wouldn’t leave me alone about it.” She realized she was supposed to create a class that others can teach in their community and that this class should remain free of charge, in order to reach the most people possible. This class was not designed for Katherine to teach. It is for others to teach and learn from her research. Katherine is looking for as many instructors and partners as possible to help distribute this valuable information.
